The Mouth-Watering Recipe Of Paneer Lasagna With Kadahi Sabzi Ratatouille Is A Must Try

I bet you must all have tried lasagna once while visiting a restaurant. Well, nowadays, one can easily make it at home also giving us all restaurant type feels.

So here’s one for you. Try out the delicious Paneer Lasagna with Kadahi Sabzi Ratatouille and we bet you won’t stop eating.

So folks, come on quickly grab the below ingredients which are as follows:

  • 500 gms cottage cheese (paneer)

For the Ratatouille:

  • 1 medium green capsicum, 1 medium red capsicum, 1 medium yellow capsicum all cut into dices.
  • 1/2 medium yellow zucchini, 1/2 medium green zucchini, 1 medium boiled carrot all cut into dices.
  • 1 1/2 Tbsp kadahi masala (a mixture of cumin, coriander, chillies, pepper and fennel)
  • 4-5 finely chopped garlic cloves
  • 3/4 cup onion-tomato masala
  • 1 tsp coriander powder
  • Salt to taste
  • 1 tsp red chili powder + for sprinkling
  • 2 1/2 tbsp oil

For the vegetable mixture:

  • 1 tbsp raisins
  • 1 tbsp pistachios
  • 1 tbsp cashew nuts
  • 1/2 tsp finely chopped ginger
  • 1 finely chopped green chili
  • 1 large potato, boiled, peeled and crushed

For Garnishing:

6-9 Tbsp grated processed cheese

Juliennes of mixed pepper

So folks, now let’s get started:

  1. Firstly, preheat oven at 180ºC.
  2. Now cut the cottage cheese into thin slices and place on the worktop.
  3. Sprinkle salt and red chili powder on them and set aside.

For the vegetable mixture:

  1. Heat oil in a non-stick pan and add raisins, pistachios and cashew nuts, roast till browned.
  2. Heat oil in another non-stick pan and add ginger, green chili and sauté for half a minute.
  3. Now, add potato, mix and sauté well. Remove roasted nuts from the pan and roughly chop them.
  4. Add salt, coriander powder and red chili powder to potatoes, mix well and cook.
  5. Add chopped nuts, toss to mix and cook for about a couple of minutes. Now transfer the mixture into a bowl and cool to room temperature.

For the Ratatouille:

  1. Heat remaining oil in another non-stick pan.
  2. Add kadahi masala and garlic, mix and saute till garlic turns brown.
  3. Add onion-tomato masala and mix well. Add water, stir and cook.
  4. Add capsicums, zucchinis, carrots and mix well. Add salt, coriander powder and remaining red chilli powder.
  5. Mix well and cook for about 10 minutes.

Final Preparation:

  1. Spread a layer of cooked vegetables in a glass baking dish.
  2. Top it with cheese and spread 3-4 cottage cheese sheets on top.
  3. Spread the cooked potato mixture on top crowned with cheese, repeat and end by topping with cooked vegetables, remaining cheese and a sprinkling of kadahi masala.
  4. Place the dish on baking tray and put the tray in the preheated oven and bake for 15 minutes.
  5. Serve hot garnished with pepper.
