Ingredients: serves 3

6 Quail eggs

100 Gms of Puy lentil

40 Gms of butter

Salt to taste

Pepper to taste

40 Gms of bread crumb

1 whole egg – for egg wash

20 Gms of flour

100 Gms of micro greens

40 ml of olive oil

500 ml of water

Method of making:

To get started, boil out the eggs and heat 3 minutes and peel the shell and allow it to cool. Take the lentils and wash almost 4 times and add salt, pepper and water and cook in pan.  Take the lentils and remove out the lid and keep stirring the ingredients till the water gets evaporated.  Make smooth puree and cool the thick puree and coat with the eggs. Make sure the coating is done in proper with flour, egg and bread crumb and you can use spoon here. Now get ready to deep fry the coated eggs and stuff until they are turned golden brown in color and deeply fried.

On the other hand, toss the micro green with salt, pepper and olive oil and enjoy eating with the Quail egg.
